Here is the delicious recipe for grilled sardines and peppers, served with butter made with olives, tomato and basil.
Ingredients for 4 persons :
- 24 sardines from La Turballe
- 2 peppers grilled
- 10 cl of olive oil
- Salt flower
- Freshly ground pepper
Blended butter with sunny flavors:
- 120 g semi-salted (or unsalted) butter
- 10 basil leaves
- 10 black olives, pitted
- 6 petals of candied tomatoes
- 3 pinches of Espelette pepper
Sardines and grilled peppers, mixed butter
For the mixed butter with sunny flavors:
> Take the butter out of the refrigerator 1 hour before using it so that it softens.
> Wash the basil.
> Chop the olives, the candied tomatoes and the basil leaves.
> In a salad bowl, work the butter until it takes the consistency of an ointment, incorporate the olives, tomatoes, chopped basil and Espelette pepper. Mix until the mixture is smooth.
Check the seasoning.
> Place the butter on cling film and roll, taking care to close the two ends. Place this roll in the refrigerator until the butter hardens (about 30 minutes).
> Empty the sardines (or ask your fishmonger to do so). Clean them under running cold water.
> Slice the grilled peppers.
> Prepare a barbecue.
> Brush the sardines with olive oil.
> When the embers are ready, place the sardines on the grill and cook them for about 5 minutes, turning them regularly.
> Arrange the sardines in a dish, season with fleur de sel and pepper, serve with slices of mixed butter and grilled peppers.
