Nope, not at all. Carambola needs to fully ripen on the tree to have any flavor what so ever. It will soften, but not have the sweet wonderful fruity flavor that a tree ripened one will.
You can still let soften a bit and slice and add to salads though. If the fruits have developed some yellow then they will sweeten slightly off of the tree. It won't be quite as good as a tree ripened fruit, but still well worth eating; just leave them with a banana for a couple of days. I actually pick carambola at this stage occasionally for juicing if I want the juice to have high acidity. You can also cut them into strips and cook them in a simple syrup for a few minutes to make candied starfruit, which is a very tasty treat.
